Patti's Tomato Pie

- One 9" frozen deep-dish pie shell
- 1 can diced tomatoes, drained
- salt & pepper to taste
- 1 tsp. dried Italian spices: oregano, basil
- 1 pkg. real bacon bits (Oscar Mayer)
- 1 cup Mayo
- 1 cup grated sharp cheddar cheese
Spread tomatoes in bottom of pie shell. Sprinkle salt & pepper and spices evenly over tomatoes. Scatter bacon bits evenly over the top. MIX the Mayo and cheese together in a separate bowl, then drop by spoonfuls on top and spread evenly out to edges of pie shell. Bake at 350 degrees for 30 minutes, or until lightly browned.
Lori's note: I like to add diced green olives or diced artichoke hearts to this recipe, but I warn you that it's very rich, regardless of variation!
