Spinach & Cheese Pita

- 2 boxes (10 oz.) cut spinach
- 4 eggs, beaten
- 2 small onions, chopped
- 2 sticks butter
- 2 lbs. cheese (1 lb. feta; 8 oz. each cheddar & monteray jack)
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. salt
- 2 cups milk
Cook the onions in the butter. Add drained spinach. In a very large bowl, add the remaining ingredients and the spinach mixture. Bake in a 17" x 12" pan (greased) at 350 degrees for 45 to 50 minutes.
Half the recipe for one 9" x 13" pan.
